Let’s be honest real talk, even on the healthiest diets, we sometimes crave that snack or sweet that takes us right to our happy place, so every once in a while I try to recreate treats from childhood with minimalistic ingredients.
Here’s one of my favs from childhood in Nigeria: eggroll which is typically boiled egg in sweet deep fried dough. I swapped regular wheat flour for Gluten free, nutrient dense, Cassava flour.
In the spirit of using minimalistic ingredients, instead of using baking powder (which may contain aluminium or GMO corn starch); consider using equal parts baking soda and apple cider vinegar/cream of tartar which yields the same effect as baking powder.
If you don't care about Gluten-free flour simply swap Cassava flour for regular flour, I don't have lactose sensitivity, you could just use regular 'ol butter
Also, I baked the egg roll instead of frying as a healthier alternative cooking technique, tastes just as good
