It's a Coconut mint tart 🏼‍♀️🥥 .
Vegan coconut mint tart: by @foodie.yuki
Ingredients are for a 20 cm tart tin.
1 1/2 cup fine oats
2 tbsp chia seeds
2 tbsp raw cocoa powder
12 dates, pitted and chopped
2 tbsp coconut oil, melted
1 tsp vanilla bean paste
Place all the ingredients in a food processor and process until you get a sticky dough. Press the dough firmly into the tart tin and refrigerate whilst making the filling. .

2 cans coconut cream (scoop out the solid part)
2 tbsp agave or maple syrup
20 fresh mint leaves
1/4 tsp blue spirulina +1/4 tsp green spirulina
Heat the coconut cream and sweetener on a medium heat until well combined. Add the mint leaves and let them infuse for about 15 Mina. Add the spirulina and whisk until well combined.
Spread on the tart base.
Let it cool completely before placing it in the fridge for at least 3 hours to harden up. .
