Who is up for some yummy veggie noodles by @elavegan
You will need the following ingredients:
1 onion, chopped
2 cloves of garlic, minced
1 carrot, chopped
1 cup of cooked peas
2 cups of mushrooms
1-2 tbsp of oil
1-2 tbsp soy sauce
1 tbsp balsamic vinegar
1 heaped tbsp tomato paste
1 1/2 cups of veggie broth
1/2 cup canned coconut milk
2 tsp cornstarch
Spice mix: 1 tbsp curry powder, 1/2 tbsp onion powder, 1 tsp garlic powder, 1 tsp cumin, 1/2 tsp smoked paprika
Salt and pepper to taste
Glass noodles (either cooked for 1-2 minutes or soaked in hot water for a couple of minutes)
1) Heat oil in a skillet and fry the onion over medium heat for 3-4 minutes. Add garlic, carrot and mushrooms and fry for a further 3-4 minutes.
2) Add soy sauce, balsamic vinegar, tomato paste, and spice mix and slowly start adding the broth while stirring.
3) Bring to a boil and let simmer for about 5 minutes.
4) In a bowl, mix cornstarch and coconut milk and add this mixture to the skillet while stirring.
5) Finally, add the glass noodles and peas. Season again with salt and pepper. Enjoy!
Hallo ihr Lieben! Das gabs bei mir als Abendessen. War total lecker und schnell gemacht. Einfach Gemüse in der Pfanne anbraten, dann Gemüsebrühe dazugeben, kurz köcheln lassen, Kokosmilch dazu und abschmecken. Mit Glasnudeln servieren. Genießen
