Vegan bean fritters. This is an homage to àkàrà but I put my own spin on it to make it vegan. Also I used some bean flour I had left over from my last trip to Nigeria but feel free to soak, peel, and grind your black eyed peas to use the beans puree instead. I used coconut flour, baking soda+cream of tartar in place of eggs to make it vegan .

Recipe: Makes 6 bean fritters
1/2 cup bean flour
2 tbsp coconut flour
1/2 cup chopped spinach
1/2 tsp baking soda
1/2 tsp cream of tartar
Pinch of sea salt

Mix the dry ingredients and add in some tbsp to get the right consistency. You don't want it too thick or too runny. Pour in the batter into hot oil on medium heat
