Sweet dreams and already made lunches for all this evening. Or at least that is what I get to look forward to tomorrow. Packing this ahead of time saves me a lot of grief and stress. Plus, if it’s a way that I can make sure I have some fun treats packed away, then it’s a major win. 🤗

Top Layer: Homemade Oat and Chocolate Chip Cookies with raspberries, blackberries and a pink lady apple. The cookie recipe makes 4-6 cookies depending on how big you like your cookies. Mix together 1/2 cup rolled oats, 1/2 cup quick oats, 1/4 cup nut or seed butter of your choice, 1 tbsp coconut sugar, 2 tbsp coconut flakes, 1 tbsp flax seed, pinch of salt, 1 mashed ripe banana. Once combined together scoop equal amounts of mixture onto a lined baking tray. Using hands press mixture together into flat cookie shapes. Press into the tops of the cookie either dried fruit or chocolate chips. Bake for 15 minutes at 400F and allow to cool before packing away.

Bottom Tray: Roasted some diced mushrooms, red onion, and frozen broccoli until all fully cooked. Placed contents in a bowl with chickpeas and sprinkled with salt and red pepper flakes. Tossed this mixture with a maple mustard sauce (literally 1 tsp maple syrup and 2 tsp mustard). Paired this with farro (cook according to package).
