Strawberry chia jam oatmeal bars

Strawberry chia jam:
1 cup strawberries
2 tbsp maple syrup
2 tbsp chia seeds
1 tbsp lemon juice .
For the oat bars:
2 cups GF rolled oats, divided
1 tsp baking powder
2 ripe bananas, mashed
2 tbsp maple syrup
•Strawberry chia jam.
Add strawberry, lemon juice and maple syrup to a saucepan. Cook over medium heat, stirring occasionally, until the berries begin to reduce and thicken. Stir in the chia seeds, continuing to cook for another 5 mins. Remove from heat and allow to cool. •Oatmeal bars.
Preheat your oven to 375F. Prepare a 6×6 baking pan. Place 1 cup of oats in a food processor or blender, and process until they resemble a fine flour. Transfer oat flour mixture to a large bowl and add the remaining oats, baking powder and mix well. Add the mashed bananas, maple syrup, and vanilla extract, and mix until everything is well combined. Reserve 2 tbsp of the oat mixture. Transfer the rest of the dough into your prepared baking pan, using a spatula to ensure that it is spread evenly. Spread chia jam over the surface, making sure to only go within 1/4 inch of the edge to prevent the jam from burning. Spoon 2 tbsp oat mixture on top. Bake for 30mins, until golden brown. Remove from the oven and let it cool completely. .
