Recipe(makes 12)

200g plain flour
pinch of salt
100g vegan margarine
3 tbsp olive oil
500g plums, chopped and pitted
150g blackberries
2 tsp cinnamon
2 tbsp coconut sugar
1 tbsp chia seeds
3 tbsp almond milk

Add flour, salt and margarine to a food processor and process until crumbly (or use your fingers). Mix the oil with 3 tbsps of water and gradually add to the crumbs until a dough forms. Flatten into a disc and wrap in plastic film for at least 30 mins.
Add plums, blackberries, cinnamon and coconut sugar to a pan. Simmer gently for 10 mins until it starts to reduce, then add 3 tbsp of water and the chia seeds. Simmer for another 5-10 minutes, until thick. Preheat oven to 200•c.
Roll out pastry and using a heart form, cut out 24 hearts. Add 1 tbsp compote in the middle, a little almond milk around the edge. Cover with another heart and use a fork to seal the edges tightly. Brush with a little almond milk. Bake in the oven at 200•c for 10 mins, or until golden. .
