Jollof rice elepo AKA Nigerian native Jollof rice full of all kinds of yummy goodness: fermented locust beans #iru, cubed #goatmeat, (I used chopped #arugula), #crayfish. What really makes it native is using versus other kinds of cooking oil. Added on some fried plantains and a nice chunk of goat meat #ogufe.
With all the I be posting, it’s about time I give a healthy frying tip; wait till the oil is sizzling before putting in your food so that it doesn’t just soak up the oil but begins to fry immediately, also use healthy oils …. and for plantains in particular; after frying on one side for a while and flipping, use your frying spoon to press down and flatten the flipped browned side. There you have it! .
