Hello Lovelies, rainbow tacos for diner! It’s still freezing cold, but I’m longing for spring and therefore we went for colorful tacos filled with a avocado/rocket spread made with aquafaba and which turned out so good. Roasted broccoli, chickpeas, sautéed mushrooms and crispy tofu – topped with some red cabbage.
We spent a lovely day in Basel visiting Doris @mrsflury and her kids and she spoiled us with a delicious brunch!

For the avocado/rocket spread:
Aquafaba from 1 jar of chickpeas
1 avocado
2 handful fresh rocket/arugula
Juice of 1 lemon
1 garlic clove
Add the aquafaba to a blender and mix until fluffy, add the rocket/arugula and mix again, add the avocado and lemon juice and mix until well combined, season with salt and pepper
