INGREDIENTS (4 servings):
150 g Soy Yogurt or Soy Sour Cream
1 tbsp olive oil
salt and pepper
150 g flour
50 g vegan butter (cold!)
1 tbsp almond milk
1/2 tsp salt
1/2 tsp fresh thyme leaves
Preheat the oven to 180 degrees.
For the crumble, place flour, butter, salt and thyme leaves in a bowl and rub the butter into the flour. Add the milk and mix until the mixture resembles bredcrumbs.
Place the mixture over a baking sheet and bake until golden for 20 minutes. Once baked, lt it cool completely.
Cut the avocados in half and drizzle with lemon juice.
Grill the avocados for 1-2 minutes (the grill has to be very hot, it’s important to grill them at a high temperature for little time).
Place the sour cream (or yogurt) in a bowl, adjust salt and pepper, add the olive oil, stir and set aside.
Fill the avocados with the sour cream (or yogurt) sauce and top with a generous tablespoon of crumble.
