Gluten free nigerian puff puff. Just realized after my last gluten free nigerian snack posts that there are a number of people that need our traditional Naija snacks but have to eat gluten free. So I'm going to try recreating more of these goodies gluten free. Though I have to point of that there are tons of Nigerian meals that are naturally gluten free! I made mine egg free but feel free to add 1 egg to your recipe.

Here's the recipe for 6 small-medium balls
1/2 cup cassava/coconut flour/gluten free flour of choice
1 tbsp psyllium husk
1/2 tsp baking soda
1/2 tsp cream of tartar
1/2 tsp nutmeg
1/2tsp alcohol free vanilla extract
1 tbsp coconut sugar/sweetener of choice
1 tsp yeast

Mix ingredients together
Mix and fully incorporate in few tbsp of hot water to make firm mold
Divide mold into 6 balls
Fry in hot oil on medium to high heat of choice (I used avocado oil)
Dip balls in coconut sugar and voila!
